APPLE and PEANUT BUTTER (with honey)CRISP

The other day, I had a bowl of cooking apples that I needed to do something with. I looked through my cookbooks and almost everything I found had cinnamon in it. We like cinnamon, but apples and cinnamon is “so predictable” does that make sense?

Hoping to find an idea, I started looking through the pantry when it hit me; I love dipping apples in peanut butter and better yet dipping apples in peanut butter mixed with honey…bingo! Here is my new recipe for Apple and Peanut Butter (with honey) Crisp, it was a big hit with hubby. The apples are mildly sweet and the raisins are plump and juicy. The crunchy topping has a hint of peanut butter...just right!


5 Granny Smith apples (cored, peeled, sliced thin)
½ cup raisins
2 tablespoons brown sugar
2 tablespoons all purpose flour
2/3 cup quick cooking oatmeal
2 tablespoons flour
¼ cup brown sugar
¼ cup peanut butter
2 tablespoons honey
2 tablespoons chopped peanuts


Place apples and raisins in a pan and barely cover them with water. Boil for about 2 minutes, then drain (apples will not be totally tender). Toss partially cooked apples and raisins with two tablespoons of brown sugar and two tablespoons of flour, making sure the sugar and flour are mixed evenly through the apples. Place this mixture in a buttered pie plate.

In a small bowl, mix the peanut butter and honey (set aside). In another bowl, mix the oatmeal, 2 tablespoons of flour, ¼ cup of brown sugar, then cut in the peanut butter mixture with pastry cutter (or two forks) until it looks like crumbs then stir in the chopped peanuts. Sprinkle this mixture on top of the apples and bake in a 375 oven for 30-40 minutes or until apples are tender and crumbs are golden. Serve with whipped cream or better yet, vanilla ice cream.
